The first update was live for 7 hours now on steam. How long does it usually take GOG to publish the update?

This update solves the annoying coin bug, and I'm stuck waiting for it.

I was refreshing gog every 30 min expecting the update to be just couple of hours late, but days?! This is a real turn off for me from buying from gog,Why does it take days to replace a freaking file?!

It takes time to test the update for issues with the gog version and making packed install files. And people don't work 24/7. The files on steam are usually updated by the developers themselfes, after testing of course.
There have been cases of Steam games getting bad updates. For instance, one update (I think it was for the Mac version of Cave Story+) replaced the executable file with sonething not executable, which made the game unplayable (and Steam, unlike gog.com, forces you to update if it knows there is an update available). I also read about Elminage Gothic getting a bad update as well.

A more high profile case (though one that didn't render the game completely unplayable) is the Skyrim 1.2 patch, which introduced Bethesda's trademark bugs to a game that previously had surprisingly few bugs for a launch Bethesda game. From what I have read, it made dragons fly backwards and made resistance not work (so you could kill a Flame Atronach with fire, for example).

Perhaps it's a good thing that gog.com checks updates to make sure they work. (Also a good thing that they are planning to add a rollback feature to GOG Galaxy.)
Testing the updates is the job of the developer and publisher, not the store and the distributor. I'm not sure GOG even tests the new updates since that is not a simple task - for decent testing - even for one game, let alone a whole library, that is border line impossible. It is more likely that the publisher cancels the update for GOG after seeing it not working on steam.

I really hope that Galaxy and rollback features will give GOG confidence to leave the updating process completely to the publisher, handling the update themselves might have been a decent method in the "good old games" days with old games almost never update, but that just does not hold up for newer games that are updated constantly. Especially in this dumb age where games without day1 patch are almost not playable.

2 days later, and I'm still waiting for this stupid update, I would most likely have finished this game if I had purchased it on another platform. This is really an antiquated way to handle a modern site.
Or it's just one person being overly impatient. Two days is nothing.
I just got notified that Grandia II has been updated; a 3 MB patch is now available for download that patches the game to version 1.02.

Or it's just someone who wants at least similar level of service to the competition, I had a choice between this site and the other one that has better service, and I chose this one just to support it, and I know many people do the same for the same reason, just for it to be at least on par with the competition someday, not for it to stay at the same level as it is in now.

If GOG picks your "it's just one person" mentality, it will stay where it is, a distant second, if it's even in second.
