Could have been useful to have all the ship info into the PDA, including management of the crew jobs...

NOT in the way you think, at least not super-efficiently.

There is the crew "side screen" to the right of every terminal. (RMB to scroll to it). You can use that to unassign crew, then shift back to the main termianl screen,a nd use quick assign to get them to come work in the module you're in.
