Thank you very much! I'm back to using 1.2 and am very happy :)
Also, thanks FTFY for the link.
Forced update here. "Thanks" GOG for giving me the choice to install the new version or keep the old one...

Thank you.
Looks like it worked.

I wonder if it would be to much to ask GoG to Sticky this? hahahahaha

Tikkia: For me it was not a forced update, I was prompted and thought I would give it a second try. Once more I uninstalled it almost immediately because it did not import the tags and hidden status of the games I had.

It also is missing much of the functionality that I used in 1.x, or at least it was not in a place that I could find. Will I try 2.0 again? No. Will I ever use Galaxy again if they Remove the 1.x version? No. Can I play my games without Galaxy? Yes. So I will always have a viable alternative to using 2.0
Download is missing from the web, as far as I could find it, so you're forced to use Galaxy to download the games. Complete garbage move.

Link is still around for the download. I saved last time in case they take it down.
So I've already created a shortcut with /runWithoutUpdating
Renamed GalaxyUpdater

But I'm wondering where the 2.0 files that were downloaded are stored?
My guess is
"C:\ProgramData\GOG.com\Galaxy\autoupdate-verified"

and

"C:\ProgramData\GOG.com\supportInstaller\2071628374"

Would it be safe to delete the contents of these folders?
Actually, it turns out that I am using Galaxy 1.2.66, wich is not trying to force me to auto update. The first one is the exe that I installed on my new computer, the second is from a link provided by another goger.

setup_galaxy_1.2.66.64.exe
setup_galaxy_1.2.67.58.exe

Edit:
As I was typing this it tried to get me to update, but did not force me to do so.

ZyloxDragon: You can download the 1.2 setup executable here: https://content-system.gog.com/open_link/download?path=/open/galaxy/client/setup_galaxy_1.2.67.58.exe

When it's installed, uncheck the Run Galaxy at Startup option, close Galaxy, then add a shortcut to your startup folder to Galaxy with the /runWithoutUpdating argument, then restart Galaxy from that shortcut.
THANK YOU! tbh I didnt save the original execute-file. This morning: SURPRISE!!! Galaxy 2.0.

I want also thank the others, too. Deleting the GalaxyUpdate.exe was the solution.

Galaxy makes it much more convenient to update games, not gonna lie.

Going on the website and checking manually for updates is a massive pain in the butt.

I consider it to be easer than dealing with G 2.0

I've just removed 2.0, installed 1.2 and removed C:\ProgramData\GOG.com\Galaxy\redists\GalaxyUpdater
Do I need to disable autostart and edit the shortcut as well?

If you deleted the GalaxyUpdater then there is no need to disable autostart or edit the shortcut. The main reason for doing those 2 things was to make sure you were controlling how Galaxy launched assuming GalaxyUpdater wasn't changed/deleted.

I just posted the following step by step in another thread so I apologize for the double post, but hopefully this helps more people see that there is a workaround to this forced upgrade:

Uninstall Galaxy 2.0
Go to "C:\Program Files (x86)\GOG Galaxy" and delete all remaining files
Download Galaxy 1.2.67.58 from the link in this thread
Install Galaxy 1.2.67.58
As the installation finishes, DO NOT check "Run Galaxy"
Before running Galaxy again, go to "C:\ProgramData\GOG.com\Galaxy\redists" and rename Galaxyupdater.exe to something else like Galaxyupdater.old or just delete it completely
Then run Galaxy, go to your settings and change everything back to your liking and you should be all set

No more popups or forced upgrades

Thank you.
Just realize that the client does make calls to the update file on occasion. There were 3 separate copies of the updates file on my system, which is why I choose to just block the files via my firewall. Galaxy becomes unrespondent on my system unless I end the updater task, which seems to be about 1x per day.
