BlackSun: In case the update already happened, all you can do is...
- uninstall Galaxy, and reinstall v1.2 from an old setup (Link: hosted by GoG).

BlackSun: =)
I stand corrected. In my defense, I just jumped to the "TL;DR" header as I already know why I don't want to alpha test gog 2.0. (It's too buggy to be called a beta. In all honesty, I'd be embarassed in my professional life to release it even as an alpha. They obviously don't have any in-house testers doing even basic things like testing under clean Win10 installs.)
There is a way to disable the blu "update warning" banner in Galaxy 1.2 ? It's annoying.

I haven't seen the "update warning" banner after reverting to 1.2 and deleting
ProgramData\GOG.com\Galaxy\redists\GalaxyUpdater.exe the day after the forced update.

1.2.67.58 I downloaded it from the link in the first post of this thread,
https://cdn.gog.com/open/galaxy/client/setup_galaxy_1.2.67.58.exe

Same version then, but can't get rid of the blu banner.

Maybe it's a setting then? I have everyting turned off because I only use Galaxy for the online discoveries bit of NMS.
Did you check for/delete the other files mentioned in the first post? I didn't have any others, just the updater.
Thank you SO MUCH for these instructions, I was tired of Galaxy yelling at me to update to 2.0 so did it last night, not realizing that it requires Windows 8+...I'm still running 7 so it caused some significant issues. It would be nice if the installer recognized that the OS didn't meet requirements and refused to installl! Everything is all good now.

I honestly miss when GOG didn't have a client.

While I don't use Galaxy, I heard about the forced update to 2.0 and gave it a try. I will say the games view is a little nicer looking (that is the only good point), HOWEVER, there isn't a way to sort by date acquired which is very lacking. Also I didn't have any problems running it in win 7. Granted I didn't use it for more than few minutes but everything worked (that is IN the client, can't believe they removed the forums and other features then pushed a update.

Perhaps if you tried downloading/installing direct instead of doing a update install? Or are you missing a service pack for win 7? Either way I would stick with Galaxy 1.x

Also did you know you don't have to use the client if you don't want to? You can just get all the games through the website download (offline installers). Some games need Galaxy for multi player, but they still run. Or at least all the games I have do. For big games that make it more difficult to download through the website try something like XMD https://sourceforge.net/projects/xdman/ it lets you start/stop/control bandwidth of downloads. Just add .bin to the watched file types in the options, install the addon for your browser and you are good to go. I'm using the 2018 version, the newer one has a bug with bandwidth limiter which I think he is working on. I've looked at a lot of download helpers and many of them have spyware or other junk in them. This one is open source and low resource. You can also turn it off when you are not downloading something (and it don't take up anything when it is off, unlike many of them do).

Implemented and restructured the original post to make it easier to follow, hopefully.
Thanks for the feedback! =D

williamjcm: Not gonna lie, GOG games that require Galaxy go against the "optional client" thing that was touted back when GOG announced Galaxy. In a way, that makes Galaxy into some kind of DRM.
Now, to be fair. This is largely on Steam, and no real way around that other than entirely removing multiplayer features, or re-developing large portions of the original game.

Games nowadays tend to just use SteamAPI for multiplayer services. That means, developers don't have to waste their time on creating that part of the code themselves - they just implement the already existing, "3rd party" SteamAPI to do the job they need to have done for multiplayer to "just work" with an already existing good service rather than creating and babysit one of their own. It's like a puzzle piece, slotted into the place where devs originally had to create their own.

As a logical consequence, this approach leads to the issue that, when all things "Steam" are removed, that puzzle piece too goes missing - and all that GoG can do here, is provide their own puzzle piece that slots into that hole to re-enable this feature for us. And, that puzzle piece is part of Galaxy (multiplayer-capability & friendlist).

For that reason, this is the one exception we have to accept.

Agreed. BUT most games with that multiplayer component still run without Galaxy. No multiplayer of course but they still RUN (at least all the ones I have do). That is what is most important. At least to me. It means the game will keep working even if GOG disappears (which I sure hope they don't and continue to be DRMFREE and have offline installers).

@BlackSun, thank you for this guide very much. For some reason on my PC Galaxy updated it self to ver.2.0.xx some time ago, but with your help and help of community in this forum I've successfully returned to Galaxy_ver_1.2.67 and this is great!
Bump.

Thanks for the instructions. My 1.2 client somehow still managed to update today. Reinstalled it and disabled everything again. If there are new, more reliable ways to block the update, would be glad to know.

Of course this is not tenable long term, but trying out 2.0, I immediately found several unpleasant bugs and niggles that I'd frankly prefer to wait out. (Tags didn't work and this is how I organize my entire library, and table view of games glitched out big time). Maybe they'll add a bit of customization into the Galaxy 2.0, then I'd have no problem upgrading.
