It's doubtful considering they're set to lose their current discount at some point today.

Was there anywhere an official statement on the exact time the sale's ending on Jul. 5?

I looked around but didn't stumble upon the answer.
The sale "days" usually start at 1:00PM GMT, so I would assume it ends on July 6, 12:59PM GMT

GOG clearly states it's Jul. 5.
The logical conlusion would be that it ends at 12:59 GMT (an hour after noon GMT) on Jul. 5, but I'd like to be on the safe site and have an official statement so I can plan accordingly :-)

Fallout 1 and 2 and all other Interplay titles were 50% off INDIVIDUALLY only for the first week of the sale.
Unless they'll be included in a bundle, they won't be on sale for the time being anymore.
