Every so often when you see a corpse, either put there by the developers or recently killed by your hands, we can decide to burn it. But why are we doing this? The game never tells. And in case it does it must be way ahead in the game, because I am already on chapter 3.
Because sometimes you think they're dead and they rise up again but yes, it's a gimmick, on Resident Evil Remastered you have to burn them otherwise they return even stronger so that makes sense.

Oh, there's another reason, further ahead you will have to because of a special event but you will realize that by yourself so i won't spoil it.
because burninating is good

Seriously, in Postal 2 you do it because you get bonus points for it, so long as you immediately piss on it afterwords. In MK of course, if you are using Scorpion, it is also good for big time bonus points.

Because zombies can move even with missing muscles and limbs, but flammable skin is their weak point XD

They do? Because I've run past several corpses now not to waste any matches and none of them has risen.
Guess it happens more regularly later on.

Yes, either you shoot them and they pretend to be dead (you go near them and they attack you) or they are laying down there when you arrive to the area and rise when you approach them (you can use the matches before they rise up).
It's rare in both cases and since you have limited supplies you're never sure when to use it but like i said, it's a gimmick so don't worry too much about it.
