I totally missed this thread. Thank you for hosting it! I was searching about this kind of information a while ago, now I have my answers.
I always held off buying Metal Slug because of its awful port, now I guess I have no reason to wait any more. :)
Unconfirmed
Monkey King: Master of the Clouds
THE KING OF FIGHTERS '98 ULTIMATE MATCH FINAL EDITION
How do I get the ROM of Garou: Mark of the Wolves from the game files?
In the Metal Slug games, the ROMs are in the OSX zip file, but the OSX zip file of Garou doesn´t have its ROM.

Compatible with MAME
ART OF FIGHTING 2*
Much thanks. I'll have to look at doing this one as the default unmodded version sold here has really bad input lag. It's pretty much unplayable in its current form.

You can extract
garou__mark_of_the_wolves_en_gog_1_15374.pkg
with xar, or similar tools. and you will get
Scripts, which is a gzipped cpio archive.
You can extract it with cpio, and you will get a lot of files, including
garou.zip, which is what you want.

Thank you very much!
I didn´t know it was a compressed file that could be extracted. ^^'
I used Easy 7-zip to extract both the .pkg file and the Script file.
It works for Garou and Shock Troopers 2nd Squad.
I'm not sure if the games of the Zork Anthology (Zork I, Zork II, Zork III, Planetfall, Zork Zero and Beyond Zork) should be included in this list. Do you want to include games based on virtual machines? You can run the games with the interpreter of your choice (e.g. frotz, bocfel nitfol or garglk which includes all three of them with pretty text rendering).

I treat them like ScummVM or DOSBox games.
Some other GOG games also run on virtual machines, like Another World.
Some other GOG games also have alternative game engines, like Dungeon Keeper and Theme Hospital.

Since people could run Zork series without problem, I will not list them here.

Ok. I was going to mention Another World if I had remembered the name at the time of my post.

Although I would not throw them in the engine recreation basket like CorsixTH because those that are not based on a source code release or completely reverse engineered do not necessarily play the same as the original.
According to the store page, Tanglewood comes with the ROM as an extra, which should therefore be playable on a Sega Genesis emulator (or perhaps even on actual hardware, provided you have some sort of flash cart or something).
This reminds me of the Golden Axe games on steam, which are just genesis Roms and an emulator..

ADDED, thank you!
Even if MAME technically supports it, I doubt MAME is the best thing to play it with given that it's a Master System ROM rather than an arcade ROM.

EDIT: Same for Tanglewood.

If games that include ROMs that work in MAME after conversion should be on the list then Raiden Legacy and Double Dragon Trilogy are missing. I think all the games included in those compilations can be converted but for now I managed to convert Raiden (raidenb), Double Dragon (ddragon) and Double Dragon 2 (ddragon2).

They work in the latest MAME (0.209) but raidenb has an undumped ROM so it might not be compatible in future releases of MAME.

Could you list the tool/method to convert/extract those game data to ROM file?
I would be happy to add them to OP.
