Bought the CDs second hand some time ago, and it worked fine under Wine...

Still, I just bought this version, both for convenience, and to salute that goddam feat.
Kudos to everybody involved!

Saving a game doesn't seem to work....using macOS.
Doesn't create a new save slot or save at all.
Anyone else have that issue?

A few people have been reporting this issue for some macOS versions.
For some of them the solution seemed to be to grant the OS with permission to write in the documents folder.

You could have a look at the dedicated forum for the game, to see if any of the suggestions help:

Thank you so much for this! Fantastic achievement. Hope to see the Dune series up here sometime soon as well!
I have the original 4CD set, and was pleasantly surprised when an updated version was released via GOG! Instant purchase, works very well on ny W10 laptop, best adventure game ever! THANK YOU!
As fan of Blade Runner movie since 1982, this is a Westwood Masterpiece. Just would love to have the subtitles option. Thank GOG for let us enjoy this jewell.

The original release didn't have subtitles but this post by a member of the ScummVM team explains how to add them via a fan-made add-on:

Thank you @PreatorianWolfie !! That did the trick, I had to grant the game full disk access and then saving a game would work.
Thanks again.
