Then die and repeat and start all over from the beginning again, die and repeat and start all over from the beginning again... what's not to love about repetitive gameplay and losing all progress from a game designed to kill you so you can, die and repeat and start all over from the beginning again? :P

Are there really no Achievements on the GOG version, or is that just an error on how the store page lists the game?

Normally this dev does give GOG customers Achievements on their games.
