Because of some of GOG's amazing promotions I have many platformers in my library even if I am not a fan. I've tried Mario a lot of times and I suck. So please throw platformer's name at me that are as unmario-like as can be.

It would also be nice to be able to save anywhere but I don't think any in that genre are like that.

I could list every platformer I own but that would be hard and at my age hard takes more work than when I was a teen. Try to consider that my reflexes lag as much as tinyE is fast in derailing a thread.
Give pandemonium 1 a shot.
La-Mulana. You have to approach most situations with a controlled pace, otherwise you would set off traps.

La-Mulana review
Try UnEpic.

And yes, I saw that.

If the OP can't handle mario, la~mulana will chew them up and spit them out.
Mario is more about reflexes, while La-Mulana is centered around solving puzzles and observation. That said, La-Mulana is pretty hardcore.

UnEpic is about a lazy shiftless smartass with the reflexes of a sloth. UnEpic is the clear choice here. It's like playing me.
If there is one thing I think of when I hear la~mulana, it's that stupid wall you walk through. If there is a second thing, it would be reflexes.
tinyE a lazy shiftless smartass with the reflexes of a sloth !.

I have the same problems, and I loved 140.
Hmmm... i wouldn't really recommend platforming... poor reflexes suggests optional platforming...

Well there's Child of light... the beginning has a tiny bit of platforming before you can fly...

Unepic has been listed, yeah pretty good choice.

Hmmm it seems like it would be better if you went for a jRPG, like Breath of Fire... Turn based, no platforming (in the jumping sense)...

In Realms of Chaos you can save anywhere anytime. On the easiest setting you won't be knocked down when you're damaged, you start off with max health and max attack power, and most enemies go down in just 1 hit.
You might want to give Another World a try, it's a cinematic platformer and as such slow reflexes are not a problem but timing is. This means for example that when you want to jump you can already press and hold the jump button before your character reaches the ledge and he will jump when he reaches it. This can be a bit awkward but it's a matter of getting used to.
Kirby games are pretty much aimed at beginners and people with low levels of skill - most of them let you fly indefinitely so you won't be falling into a lot of pits and are pretty generous with 1ups and health - though, it can occasionally be hard to 100% clear them or get the true ending (screw you Kirby's Dreamland 3 minigames)

maybe starfy too, I haven't played that one.

In Wario Land 2 and 3, you're immortal and can't die or get a game over and the gameplay is more about getting past obstacles with status effects inflicted by enemies (like being squished by a lead weight to let you fit through a small gap). Though occasionally you have to use a bit more finesse to avoid getting hit by attacks that would give you a power that would set you back.
La-Mulana has reflex based boss fights and the bats, fish, and other mobile enemies. I'd not suggest it.
