Yup, still plenty of interesting classic FMV games missing on GOG. If you haven't already, vote for the ones (and any other games you want to see here) on the wishlist:
http://www.gog.com/wishlist/games

Now you've reminded me of Ripper, which I got as a birthday gift, but was unable to play at the time, and I've since lost my copy and never played it. =\
A few of the better FMV games on here:
Spycraft: The Great Game
The Tex Murphy series
Gabriel Knight 2 - The Beast Within
Her Story looks pretty good too, though I haven't played it yet.

Spycraft was a good one! I wasn't going to mention this, but it is listed on fmvworld.com:

The Journeyman Project did not have as much FMV as you'd expect from an FMV game, but I really enjoyed this trilogy and it did have a couple good actors: Michele Scarabelli and the late Graham Jarvis. Of the 3, there was far more FMV in the last game, Legacy of Time.

I played that one and found it to be a bit disappointing. At one point I figured out the story and still had to unlock all the clips before the game ended. Felt a bit tedious and unrewarding for people who might pick up on trail of clues quicker.

LOT is great, it's actually the first game I've bought on GOG. But it's also the only game from trilogy that I liked. Altough it's been a while since I played them, maybe I should give them another chance.

Madshaker: sherlock holmes consulting detective 1-2-3
These are available on Steam, I got them in some bundle.

Well, they just released NOCTROPOLIS!!!!

Gabriel Knight 2 is also superb.
And lets not forget Wing Commander 3 and onwards!

And I love the cheesy FMV in the command and conquer games too!

Yes I know they aren't FMV games per se

Wow i forgot spycraft,,, that was a fun game hmmm

Psychic Detective had a great style to it , we could jump into any charcter in the story and see from its point of view , my favorite was the dog haha watching them talk from his view was pricless...

i have the the killing moon series havent played the reboot 4th one yet

on Gabriel Knight i played 1 and 2 and loved thier storys the 3rd one i see is here but they droped fmv on it and not sure how good the game be,, i see they have the reboot but they droped tim curry on it so kinda bums me ...

he was truly classic in fmv games played like 12 games he was in :)

Ps wingcommander 3 was awsome fmv too :)
Since nobody has mentioned it yet, Harvester.

There are 5 Dracula games and one Sherlock Holmes games on GOG already (which may or may not be the one(s) you're looking for) in case you missed them:

HTH
Check out Realms of the Haunting.
Sadly enough some of the FMV games use technologies that might not play well with modern computers, like the infamous DVD version of TEx Murphy: Overseer, which still doesn't work in all setups, despite there's some major kinks ironed out of it.

In some cases, like Bad Mojo, the original devs have luckily updated the game, but there's a lot of a bit boscure titles there, which we might never see.
Uhm, fancy some Dragon's Lair/II/Space Ace laser games? I know they aren't exactly FMV, but I recently purchased the Blu-ray version of D's Lair II (Time Warp) and I was blown away by how much I enjoyed the experience. It was like I went back in the arcades, 20-25 years ago, plus an incredibly improved video/audio quality...
