I was looking for a game along the lines of:

Half-life (1/2)
Unreal (the original, and best one)
Dark Forces
Jedi Knight 1+2 (well ,kind of dark forces II and III, but whatever)
Doom 1+2+3
Duke Nukem 3D
Return to Castle Wolfenstein

It should have a wide array of guns that go BOOooOOm which you can all carry at the same time

It shouldn't have regenerating health, or silly cover mechanics

(optional) I would very much like if there was some sort of melee combat too, like in jedi knight, where instead of blasting everything into smithereens you can get up close with a lightsaber and chop enemies to bits like that too. It would be even better if there were also melee oriented enemies along for the ride.

(optional) some stealth gameplay elements would be nice. Not parse as in a stealth game, but rather like there being multiple pathways to clearing an area of enemies, one of which involves sneaking arround a bit and making silent kills and keeping out of sight.

Some titles I have found out about while browsing through GOG (tell me if you like them and if you know what they play like?) ;)

I'd say that Shogo roughly matches your description as well as the first criteria when outfitted with certain mechs and equipment.

For what it's worth, Shogo has a decent focus on narrative and it also features voice acting. For those into it, it is inspired at least in part by anime and stuff like Gundam.

The first thing that came to me upon reading your description was the 2 Serious Sam games here on GOG. Lots of weapons that go BOOM and that you can carry at the same time are guaranteed (you'll have few at first but by the mid-game you'll have some quite strong and boom-prone weapons). No regenerating health or silly ocver mechanics (especially given it's an early 2000's game) and about melee one of the starting weapons is a knife, so, although I haven't tried it, you can probably chop the enemy to pieces with that, if that's what you prefer.
Regarding stealth, I don't think Serious Sam has much of that, but it does have secrets at each level and some of them (if I'm not mistaken) might allow to completely bypass some enemies.

Argh, I was also going to mention Shogo :) XIII would have fit in but it's no longer sold :(
Blood. No focus on melee combat, no stealth, no cover or regenerating health, but plenty of blood, explosions and weapons (each with an alternative use). If you liked Duke Nukem 3D, you should like Blood and, even better, it's currently discounted by 70%.

"Undying" is arguably the best one you mentioned (and arguably the best FPS on GOG) but it is also a 'horror/super natural' shooter which means you'll be shooting a lot of magic stuff as well as indulging in the occasional sword fight.

If that isn't your thing I'd go SiN or Red Faction (if it was still here :P) which both have their detractors but their both loud fast and fun. :D

I'll keep all of these in mind. SiN and blood look like fair game too, but Shogo doesn't really sparkle my interest, I must say, sorry for that :/

About supernatural enemies and that kind of stuff, that's not an issue, au contraire, the sillier it gets that way the more fun I have with these games ;)
I second Blood. Technically very simmilar to Duke 3D but better in my humble opinion.

I have already played that one, though, and it was a great game In my opinion, if you take it with a few grains of salt.

Painkiller looks like it might be fun too, can anyone comment on that one?

I think Painkiller: Black Edition is a great shooter. You can carry all the guns with you, it has no cover mechanics, health does not regenerate, you get health from medkits/souls, and so on. Some of the levels has hundreds of enemies on them, and the weaponry is awesome.

I don't think it would fulfill your optional wishes though.There is a melee-weapon, but I never used it much. There is also no stealth at all.
I'm glad so many people are mentioning Shogo.

Descent 1 and 2 are excellent choices. They're fully in 3D with 6 degrees of freedom, so it takes a bit to get used to the controls and you might want to skip them if you are prone to motion sickness. If you like Doom and Duke Nukem it's the same kind of gameplay.

It has "old school" shooting mechanics (you against hundreds of enemies and constant mayhem). It has a disappointingly linear level construction. Well, technically the levels aren't linear but you are guided through them in that fasion with gates opening and closing. I think that the shooting mechanics and general speed of the game make up for that.
