I am aware I am probably missing the obvious, but I wanted to do a gift and I cannot find the way to give the gift without knowing the email address... How, am I supposed to do so?

Gift it to your e-mail address, copy the link you'll receive and you can give it to the recipient.

Provided you're friends with said user, or at least that the user accepts incoming chats from anybody, you can just auto-gift the game to yourself, and then give that person the code via chat.

Seriously, the "Start conversation" option is always grayed out to me.

Check your settings. You either have it as no-one or friends only. Then check if you can chat with me.
