Both are getting removed August 31.

Windforge is a steampunk action/building sidescroller where you can carve up sky whales for essential materials and then fight off enemies with your crafted gear and contraptions.
Schein takes you for an atmospheric puzzle/platformer ride through a mystical swamp whose secrets are only visible to those smart and gifted enough to see beyond the veil.

I've had Windforge for a while but never actually started playing it,

I advise people to stay well away from Windforge. I think the Steam version got one extra patch over the GOG version but even there it's a broken mess. If I had to hazard a guess, the removal of Windforge is at GOG's initiative.

As for Schein, no idea.
It's sad to see Windforge go. It had great potential. Marred by some bugs. Basically a "Terraria with plot".
I find it weird why we basically never had any more story-centered "Terraria-like" games after this.

Possibly. As I said above, Windforge was a broken mess that has essentially been abandoned by its developers. That is possibly because the developer, Snowed In Studios, has folded. Their last Tweet was June 2016, same with Facebook. The website says "(c) 2017" but it's possible that the year is simply updated by a server-side script designed to keep that at the current year.

GOG is different from Steam in that GOG provides direct support for the games that it sells. This means that GOG must maintain a direct dialogue with the developers. If the developer folds and, as will often be the case, has no legal successor, GOG is required to provide support for a game for which support cannot be provided. Hence my speculation that the game is being pulled at GOG's initiative.

Schein is another thing altogether. The developer still exists, but they haven't produced a PC game since Schein. Since then, they've focused on a small number of very low-grade F2P smartphone games. It's possible that the developer has chosen to pull the game from GOG, but it's also possible in this context that GOG has chosen to pull the game if the developer has proven unwilling to support their title.

It's a sad fact of independent game development that many developers are fundamentally unprofessional in their business dealings. Most don't secure legal succession, which means that if the rights owner dies (if it's a person) or folds (if it's a company), nobody bothers to continue distributing or supporting the game or handling the rights. Private individuals often lose interest and refuse to continue supporting their titles, or move house and don't communicate their new contact details. Also, if the developer was unable for contact, it's possible that GOG was unable to transfer royalties for the games to the developers.
