Every game I load is in borderless windowed mode, because it`s easier/faster to alt-tab whenever I want to.
Well, except for Bethesda games, because they`ve not learnt how to code games screens properly for whatever reason ;p
Windowed mode kills immersion for me. I avoid it most of the times.
Kerbal Space Program, and for no good reason really. I just haven't bothered to go into the settings and change it, I've always played in windowed mode and at this point I probably always will because it feels natural playing KSP that way.
Some console games that I play using an emulator. Many of these games were already unoptimized for my laptop to begin with. So switching to windowed mode allows me to get better frame rate at most of the time, or at least that's the only difference which I could notice.

I've recently realized that I will have to play Blade Of Darkness in windowed mode if I want to have the graphics in the game look the way they should. The game doesn't support wide screens so when I play the game full screen, the graphics are stretched wide and everything looks funny.

I had to do this recently because windowed mode was killing immersion for me.
I try to play any game either fullscreen windowed (aka borderless) or windowed because a lot of games hate alt-tab (I do heavy multitasking so it's a must) and/or remote system management tools like TeamViewer or AnyDesk.

I play ME2 & ME3 in borderless windowed mode because I can't take screen shots in fullscreen mode.
Strangely ME1 had the F11 key take screenshots in fullscreen.
Civ 3, just so I can do other things while waiting the AI to finish their turns.
Most of them? Windowed-mode is nice for quick task-switching and for multiple monitors. Plus if a game crashes in a window, it's less likely to take down the entire OS.
