On january 28th the EPIC-exclusivity of Journey to the Savage Planet ends, and publisher 505 Games is GOG-friendly. So there is hope!

In the case of Death Stranding I think it's Kojima's fault, I had read some people discussing the fact that he's obsessed with DRM and the fear of his games being pirated.

I wouldn't say that. Well, or clarified that 505 Games is very partially friendly.
For example, GOG does not have a bunch of games that are on Steam and released before Control:

I know, but Denuvo is usually removed because the license to use it expires and they don't have an additional buget to spend. And if Kojima has a real irrational fear of pirates (despite act all cool with CDProjekt RED) he might find it unacceptable to release a game on a supposedly DRM-free platform. I hope I'm wrong of course.

I believe the game is best played online so you will need Galaxy..So I don't know how a lot of people will react on that.
Yeah part of why Death Stranding won't come to GOG (probably) is that there are online-parts of the games that are deemed essential to the gameplay experience. Besides just leaving messages/signs for other players; a lot of the world itself (paths, roads, etc.) are built up by others players in your game session; of course you can build this by yourself as well but that's not the point. Thus the world is "alive" in a sense that makes it a bit too tied into the game without it being fully multiplayer.
