I did not use Galaxy (nor do I intend to in the future), and I was informed GOG Downloader will now longer be updated, therefore, it can not be guaranteed for future use. So I am downloading Witcher3 at a painfully slow pace.....link by link..... After it is done, (maybe tomorrow?), is there any way to make sure the files are good and that nothing happened to them during the download?

Actually I've downloaded TW3 through the Downloader no problem. And yes MD5 hashes or checksum would be good, but GOG doesn't have them.
Just run the installer and choose verify to make sure the installation archive is ok.

Also got told that you'll still be able to archive the game installers downloaded through galaxy (but i haven't tested it myself - yet).

Yes you can download the installer files through galaxy as well in case you prefer.
