I would like quick travel from one point on map to another instantly. Being Disabled for 29 years, this would allow me to travel once again. To sip wine while writing my poetry, I could once again be a true bard.
There is an oft used inherent/baked-in skill in many games which gives the player character the ability to absorb knowledge, experience, new skills and abilities, and even life or energy from defeated foes; sometimes these things are even given willingly by allies. This nearly instantaneous absorb skill is the skill I would want in real life, if it were possible.
Time Manipulation - with life getting busier, sometimes I wish I could slow it down or speed it up to enjoy or speed up certain tasks
I'm all for being able to heal from near-critical injuries/regain energy by eating food and/or sleeping. Especially how fast it happens in games.

Get hurt on the job? Take a nap - good as new.
Only halfway through a marathon? Eat that donut and you're back at your peak.

Seems like one of the most useful things to have in the real world.
HUD and character sheet would be awesome. Then I know what are my skills, strengths and weaknesses exactly. Even know if I have some debuff on me for example from bad food, or if I just getting cold my HUD/char sheet already told me that there is some problem got some antidote fella' :D

But I think you have in your mind something different, like fencing skill, flying, telepathy etc...
From those I would choose magic. My favorite games are all rpgs (BG, IWD, Numenera, etc..). If you know magic, you can do everything and you can "level up" at least improve day-by-day. Of course rather choose some common magic skill than one at the wicher or dragon age series where you need to drink all deadly poisonous stuff :D
On a slightly more petty note, simply double jump...just to mess with scientists! Take that Newton!
Charm. It would be incredibly helpful in a variety of situations. Need a discount, charm. Need a date, charm. Get pulled over, charm. Trying to score free games, charm. So many possibilities.
Not sure if this precisely qualifies as a 'skill' but my wish for a real life ability present in nearly all video games is "inventory management." I think it qualifies because there are at least a few games that you can spend XP on to improve your available inventory. I would love to be able to organize my crap (all of my crap) into easy-to-find self-sorting grids and produce needed items instantaneously into my hands as needed, and have them vanish back into the inventory grid when I'm done with them. This would be a literal game changer for real life.
The best skill that you can desire from an RPG is the shout from Skyrim.

Want to go outside for a pic nic or have some great time with family and friends? Lak-Vah-Koor
Are you lonely and want to talk with someone that you trust? Fiik-Lo-Sah
Are you bored to argue with your copy summoned before ?! FUS-RO-DAH

And in the end call a dragon and enjoy the view from his neck with Od-Ah-Viing

Honestly I’d like to have 2 skills, one would be quick save! The usefulness would be limitless, but aside from that I’d like to be a skilled blacksmith to make my own swords and axes, shields and armor, etc and also be able to make a profit off of them, traveling along as I do so and proving how good my craftsmanship is
The ability to see a text log of previous conversations you've had. Would definitely help since I have such a bad memory.
Oh man, what a good one! I know this wouldn't give me any extra powers or anything, but I would like the ability to respec my abilities. Just using my current obtainable skills, I would like to allocate to whatever will most benefit me at that point in life. Hard physical work weekend? Stamina and Strength. Hard work week? Intellect and Spirit. ;-) It would force us to look at ourselves and see what would help us in each particular situation.
Being able to grow a full beard in seconds, no doubt. The barber from San Andreas knows whats up, ain’t nobody beating his hair growth cream. What i wouldn’t like to have is the Dovahkiin’s shout. ”Where is the rest of the house? I just sneezed” is not an appropriate excuse for destruction of real estate.

No but seriously, Inter-Dimensional Travel from Bioshock Infinite would be incredible. Imagine visiting different worlds at the flick of a wrist, and coming back to our world with the knowledge you gained from it. At that point, anything is possible. Or, you know, you can just throw your resident Booker DeWitt some extra tissues. Whatever suits you best.
Honestly, leveling up is the best. Spend some kind of currency to become stronger without even breaking a sweat. Another one is ressurection but that is too op.
I would like a copy of the wiki, so I could finally know what is going on, why it is going on, and how things fit together.
