The game doesn't simply crash. With the fixes GOG has implemented, the game doesn't crash.
If you have an INTEL graphics card, for example Intel HD Graphics, the game doesn't work. You'll need to find a file online called "d3d9.dll". You can download it from almost anywhere online. Then put it in the same folder as "Fallout3.exe". If this isn't the case, Something might be wrong with your PC. If you're running it on a Mac or Linux computer, it's just your version of "Wine" that is not compatible with Fallout 3.

RadiactoR, the information you provided him was very accurate as it is the same thing I had to do in the past to get FO3 to work with my Intel powered laptop and you did not deserve such abuse.

Thank you for giving info that could help others in a similar situation.

If you go to the Start menu > Settings > About, you should be able to see the full i7 model. That will help me find out what GPU it is.

Your GPU is probably not the issue. Try running the game with Vista SP2 comparability and make sure in the launcher settings that is setting the correct resolution for your monitor.
