Are there any DLCs that are essential to have? From their descriptions it seems these are rather 10MB+ small updates with minor mechanic changes, not proper DLCs.

But maybe I'm missing something.

There are different types of DLCs. Expansions and immersion packs change the gameplay. The only other DLCs with gameplay impact are the very minor DLCs "Purple Phoenix", "American Dream" and "Stars and Crescent"(but I don't know how to get them here, because they are usually part of some collections or extreme editions). Content packs have no gameplay impact and usually contain graphics and music. There are also some dedicated music DLCs.
Expansions are usually very small files, because all the files which have a gameplay impact are already in the base game installation. They are just inactive unless you own the DLC or you play multiplayer with a host who has these DLCs.

Several of the expansions have important gameplay changes(e.g. rights of man) and few people play without them. But others like Mare Nostrum are less important or are only important if you play in a specific region or a specific type of country. I suggest that you look for some of the recent DLC guides. Ideally the guide was updated for the most recent DLC Lions of the North, but other guides from the past 12 months are fine as well. Older guides either don't include the Leviathan DLC which adds the important monuments or they consider it the worst DLC, because the game was very buggy when it came out.

If you just start playing, you can play without DLCs or with just a few important ones to see how you like it and then get the DLCs which add features which you want.

As for the GOG shop, you'll get the aforementioned DLCs with the Digital Extreme Edition Upgrade Pack...
