Besides Elex, I love the whole Risen series, all 3 games. I know many people criticize Risen, but you should take that with a grain of salt, because mainly those are GOG (grumpy old Gothic) fans looking through their rose-tinted glasses of nostalgia. If you like Elex because of the exploration, the quest design, the humour, then I think there is a good chance that you will also like Risen 1-3. I can't say much about Gothic because apart from Gothic 3 I haven't really touched them.

You should really try Gothic 1 and 2. I've played all of PB's games and there is a difference between Gothic and Risen. The fact that Elex seems to feel more like Gothic 2 than any of their other games tells me that they understand that something in that game worked better than anything else they came up with after. Maybe I am a grumpy player, but Elex sure brings back some good memories.
