O.K., I can see in the system requirements where it says:

"Multiplayer Notice: Please note that the GOG Galaxy Client is required to access Multiplayer

Multiplayer is available only between GOG.com users. "

Maybe I missed it, but is there a way to tell the game when you go to install it that you WON'T be playing online, and so it DOESN'T need to install GOG Galaxy? It appears that you can uninstall GG AFTER installing the game, and the game will still run, but I despise nanny-ware, and it would be nice to be able to opt out altogether at the beginning.

It is because you are doing it wrong. You click on the button Download and Install now under Install Games with GoG Galaxy.
You need to open the batch Download offline backup game installers and then download there the available files.
