I've looked at those who've come before me with the same problem.
Sadly, none of the solutions they've proposed make any sense to me. I haven't been to find files mentioned and I suspect that I'm doing something wrong. Can someone help out? Screenshots and "PRESS THE BUTTON HERE!" solutions preferred, where it's assumed that I'm a complete moron.

Hell, I'm also extremely open to a short video chat and having someone walk me through the whole thing!

Unfortunately, retro gaming on a mac is rarely straightforward.

I don't use Galaxy and I don't own the games in question, so I cannot help you with as specific an answer as you would like, but have you seen this post (which did work for another user):

I did see all the previous posts on the matter, but they proved unhelpful, sadly. I haven't been able to find any of the folders mentioned, and that's after some hefty digging in all the Library files I could find. ;-)

So they may be there, but I haven't been able to find them.
But thanks for the swift response. The fact that someone replied gave me hope. :-)

[EDIT: I have now found the .boxer file and the savegame files. All looked well for a moment! Alas, it seems that the actual savegame files are NOT stored in there. Because there, in the SAVE folder, I find only Champions of Krynn's default gave game files, not my own. All created on Jan 2, 2019 when I installed the game, with no modifications since. Where the actual files are, remains a mystery... but progress was made, at least!]

I think it might have something to do with Galaxy in that case. I do have the Forgotten Realms games, I just tested one of them by downloading it and running it and saving a game (not using Galaxy) and it did put the current save and characters inside the relevant current.boxerstate file as mentioned above (OS 10.13.6).

I'd recommend in the meantime that you contact GOG support to ask them where the saves are stored.

I started using Galaxy a week or so ago. I suspect we would need to request an export tool from GOG team. What I've determined is that because saved games are cloud based, they get encoded into a file that lives in the Users>Shared folder in MacOS, which is then uploaded to the cloud.
On PC the cloud saving is handled by the installer creating a seperate folder called "cloud_saves" which has a "SAVE" folder inside.

The DOSBOX configuration then mounts the "cloud_saves" folder as C: after mounting the main folder as C:, which makes DOSBOX treat the "SAVE" folder in "cloud_saves" as the only real "SAVE" folder. The files in "cloud_saves/SAVE" are the exact same format as the normal files, which is unsurprising as the game is saving them thinking it's the standard "SAVE" folder due to DOSBOX.

I do not know how exactly things are handled on Macs, but I would expect a similar solution being used there.
