In the Nightdive port of Doom+Doom II, I couldn't find an ini file or anything in the game's folder. Using a controller it's difficult to react to enemies behind you because of how slow you turn. Maybe, if the devs read this maybe patch the game so I can set it a bit higher or maybe a quick turn button you can set? That would truely make this the definitive official way to play Doom for me!

The game's configuration file is found here:

C:\Users\<username>\Saved Games\Nightdive Studios\DOOM

The file you're looking for is kexengine.cfg and you can open it with a text editor like Notepad or Notepad++.
