I'd like to get this for a child or my wife (not the same person), but neither is interested in a game that has fighting in it. Are there any settings where I can make the character invulnerable or disable threats?

Yes! In the menu you can disable hazards like sharks attacking you or mines blowing up when you get too close. You still lose oxygen by hitting something with enough speed or when you ascend too fast which triggers the decompression damage.
Also, I think the best option for you would be to simply play in Observer Mode which makes you completely invulnerable, making the game very, very relaxing. You cannot, however, collect items in this mode, which also leads to not unlocking new diving sites.
So, you may disable hazards and progress through the game that way or you could play through the game like you normally would and then give your child or wife a chance to play those levels in Observer Mode :)
