I get it that the game is designed to be played on a controller, Sure, though I'm not sure entirely why.

Anyway, after having played up to the second boss (after ramparts) I haven't found a single compelling reason why you'd use a mouse? Nor why there'd be a use for a right-stick on a gamepad, or even why you'd need a left stick.
Am I missing something?

I reconfigured the keys to use arrows for movement, space for jump shift dodge. A for use, S and F for the two actions, W E for the skills. Seems to work just fine except there doesn't seem to be a clear keybind function in the keybinding menu.
Is there any reason I need a mouse or right stick?

As far as I can tell, there's no need for it. I haven't seen anything that would require using a mouse or stick. Some people prefer playing that way, but you're not handicapping yourself by not using it.

Sounds great to me. It feels kinda awkward sitting with a hand on the mouse for just using the mouse buttons.

It works really well. I feel that they're doing the controls a disservice by recommending a controller so much, because there's no input delay holding the keyboard back. It's purely a personal preference which one you play it with.

I figured out what the stick is for, it allows moving around the viewpoint. That's about all I could find.

You mean in the map screen where the keyboard otherwise will use IKJL? I think I can manage there.
If it's to be able to look down before taking a jump, might be more useful.

The latter. You can look around your character up to a certain distance with it.
