Can anyone help with getting the Conquest games to run with MT-32 in ScummVM? I'm familiar with Dosbox but I know next to nothing about ScummVM. I'm thinking my problem may have something to do with not knowing how to run the sierra installer without Dosbox.

You don't need to run the Sierra installer at all in ScummVM. It has the MUNT emulator and everything built in. All you need are the roms. Just place the MT32_control.rom and MT32_PCM.rom files in the base scummvm folder. In the Options inside of scummvm, select the mt-32 tab and change the MT-32 device to "MT-32 Emulator"

If you want general midi alongside this, you will need to download some sound fonts, but there are several tutorials on how to do this on youtube.

what error are you getting? also are you using the gog installed scummvm or are you using an official build?

The gog ones tend to be a few versions behind and may not have the emulator baked in.

I'm using the GOG version of scummvm, that may be my problem. I'll download and try an official version.
