If so, how? I can't find any mention of this capability however I see that it has been done by some players on their YouTube recordings.

They cannot in the game as is, but plenty of people out there employ mods.

Go and visit this page for example: https://www.subsim.com/radioroom/downloads.php?do=cat&id=103
(last I checked, a free account was needed for downloading mods).
