Enjoying the game so far; just got to the Mausoleum. Great atmosphere, cool level design. But I'm a little confused as to how dealing damage works. Sometimes enemies die in one hit; sometimes it takes three or four hits, with the same weapon (mainly using the Tibetan War Cannon currently). Does hitting different body parts deal different amounts of damage? Do weapons have a range of damage, like you might see in an aRPG? Is there a chance to not hit the enemy at all, like the older Elder Scrolls games? Or am I just not hitting them because I'm a worse shot than I think?
Some enemies are weaker against certain weapons/spells while others aren't (this is most certainly something you've figured out for yourself, so this is more for anyone else in the future who might look over the thread and be curious).

Some weapons can deal an instant (or as close to it as possible) kill depending on how you land a blow on the enemy with it. The Celtic scythe is one of those weapons, if I remember correctly.

With the war cannon, I think (again, going off memory that isn't recent) - you need to have it at full power/charge for it to be dishing out the serious damage it can actually accomplish. I also remember that it wasn't a super great ranged weapon and its projectile required some precision when firing.

The war cannon can kill with one hit, but it seems quite random. Pretty sure there is some damage randomization happening behind the scenes.
If you keep the attack button pressed the Tibetan War Cannon will increase their damage, if I remember correctly.

I'll defer to yourself and others on this. Like I mentioned, my response was purely going off memory (and not even recent) - to the point where, if I'm being really honest about it, the last time I played the game was using the disc install (that I have from the Undying/American McGee's Alice combo package I bought from back in the days when I was still in high school).

I keep telling myself to go back and play the game again (especially after having purchased it here) but for some reason always find there's an excuse or reason not to do so.
It looks like there's different versions of the howlers with some being stronger than others in addition to charging the cannon up.
