As I understand it, you'll get the chance to select a kit for your character when you import. I seem to recall a few other things possibly being adjusted as well (like if you rolled for max hp, your hp will be averaged out).

Yes, you get the option to specialise (choose a kit) when you import a character. Paladins cannot be dual classed.
Paladins can't dual class? That's a shame. i wanted to make a Inquisitor/Mage when I hit BG2
None of the prestige classes (Paladin, Monk, Bard, Sorceror, Barbarian) can dual class. Rangers can only dual class to clerics.

The nice thing, though, is that you seem to be able to dual class a specialized kit, so you could end up with something like an assassin/fighter or the famed kensai/mage. I'm not sure if only the original class can be kitted or if the new one can be as well.
