I've successfully installed the Fixpack and Unfinished Business mods for BG2.

Do I need to start a new game for all the changes to take place? My current game I'm just out of Irenicus' dungeon, and I'd prefer not starting over. But I really want the additional content and fixes, so if I need to I will.

BTW, I can see the different Yoshimo portrait, so I know at least one thing has worked.

AFAIK, the fixpack should work no matter what, but some of Unfinished Business may not work if you've already visited the areas where the additions are.
Anything affecting areas you've been to, the creatures in those areas, stores you've opened or the worldmap will be unaffected unless you start a new game. In this case it's probably just the Fixpack's changes to the worldmap you're missing out on, but maybe there's also something in Athkatla, if you had gotten that far.

What if I reload to an earlier save in the dungeon, before getting to the surface (I have a couple older saves from the same game)? I can just delete the save where I'm out of the dungeon.

Once I emerge into Athkatla, will all the changes be there?

In theory that would work.

The worldmap is loaded into your save as soon as you start. Reloading won't change it to the Fixpacked version. Either go on with your current save or start over.

Irrbloss: The worldmap is loaded into your save as soon as you start. Reloading won't change it to the Fixpacked version. Either go on with your current save or start over.
Wait- the Athkatla map, or every map? I'm confused. Maybe I should just start over just to be sure... It'll be like the tenth time I've run through that damn dungeon.....

Start over completely. Lucky for you there's the Dungeon-Be-Gone mod - providing you with an option to bypass the dungeon, giving you all the items & experience that you would normally have gotten from it.
