The missions in this game are pretty involving affairs and I'd like to play with less time skips (sometimes I seem to miss interesting stuff, especially during approach and landing). So, can I save while I'm flying a mission? Or can I only save after debriefing?

Unfortunately you most definitely cannot save during a mission.

I guess that saving during a mission was just too difficult to implement. There would have to have been a whole load more data included in the save file to completely capture the status of the game at the save point.
