This one apparently has extra difficulty modes and Steam achievements, as well as extras such as development diary, making of video, and technical handbook. No soundtrack though.

Does the 15th Anniversary Edition also have extra difficulty modes? It wasn't mentioned on the GoG product page if it did or not.

I don't think so. I think the only enhancements the GOG version has are the (optional) new graphics, and different checkpointing. Sounds like the Steam version is a newer release with more enhancements (I also noticed remastered audio in the Steam description).
Allow me to state the obvious:

GOG needs to upgrade ASAP

Well, one nice thing about the GOG version is that it's still possible to play the game in its original form. I'm not sure if that's the case for the Steam release.
another +1 for the upgrade, or at least include the 20th anniversary as a bonus. I really don't want to have to buy it again for just a harder difficulty.
Maybe add the '20th...' as a seperate product, but give an 80% discount to those who have the '15th..' and also add "There is a newer version...." on the store page of the '15th...' ?
I'd be ok with that as well, turns out the 20th anniversary has redone backgrounds even when compared to the 15th anniversary edition. So there is that along with the new difficulty settings.

Correction: Compared to my 15th version, only the intro scene of the lab seems different.

I was also wondering about all of this, since I'd prefer to buy it from GOG rather than Steam.

But I read somewhere that this 20th Anniv. re-release was a joint effort from developer Eric Chahi and DotEmu, and since DotEmu is basically GOG's main competition I doubt that we will see the 15th Anniv. version (here on GOG) upgraded to the 20th :(

I still hope they will, or at least sell it as a separate product.
Just give it some time. Recent experience shows that GOG will undoubtedly release 20th anniversary edition and give it free to all those who own the game.
I tried the 20th anniversary edition and i didn't like the menus and the game just didn't feel the same as the 15th Anniversary

Hmmm... then perhaps having the two games available is in order. Similar to Broken sword 1 & 2, which have the original versions and the crappy "updated" director's cut versions.
Hope GOG upgrades as well, and no there is no point in selling the 20th anniversary edition separately, since our version is simply inferior to it.

but I *liked* the "crappy" updated director's cut versions.

Well there you have it. We all have different tastes and the more options available, the better for all.
