I've played the demo, with the first chapter. When I buy the game on GOG will I be able to skip it and go directly to the second?
Are these Steam savegames compatible?

The savegames "for Steam" from https://www.daedalicsupport.com/en/games/annas-quest/savegames.html are working with the GOG version as well. I was able to restart the game from the end of chapter 2 with savegame 12. From there you can progress to chapter 3 and go on without replaying the first 2 chapters from the demo. In alternative, you can save your progress before ending chapter 2 in the demo and the GOG version will find it (not the autosaves).
