I found out that GOG DosBox configuration is very extensive for this game.
It allows use of different filters to smooth out the aged graphics and deliver IMO a better experience.

What I would like to know is why those extensive DosBox options aren't present in other GOG games ? Is it something that I could import from the AitD folder to my other DosBox GOG folders ?
You could search in the game folders for the dosbox configuration files.
Look for

# output -- What to use for output: surface,overlay,opengl,openglnb,ddraw.

and

# scaler -- Scaler used to enlarge/enhance low resolution modes.
# Supported are none,normal2x,normal3x,advmame2x,advmame3x,hq2x,hq3x,
# 2xsai,super2xsai,supereagle,advinterp2x,advinterp3x,
# tv2x,tv3x,rgb2x,rgb3x,scan2x,scan3x.
# If forced is appended (like scaler=hq2x forced), the scaler will be used
# even if the result might not be desired.

"Alone in the Dark 1"'s configuration file is called dosboxAlone.conf.
Ishar 3 for example has the file "dosboxishar3.conf" in it's gaming directory.
Might and Magic 4-5 config file is called dosboxMM4-5.conf and also lies in the game's main directory.

Before playing around with the settings do not forgett to make a backup of your configuration file.

I'm under windows 7 and I can't configure AITD with the dosbox configurator program.

Anyone can suggest me somthing?

What do you mean "you can't"?
Once configured something (resolution, scaler...) in the Dosbox configurator I can choose to save and exit or to run the game.

Both the actions bring me an error message: "Error: game not installed".

So I can't configure anything from the Dosbox configurator

I guess you are using Windows Vista or 7 and installed the game into a write protected folder, probably your "Programs" folder. You have the following options:
-install the game in a different location
-run the DOSBox cunfigurator with administrator rights (right-click on the start menu shortcut to find this option)
-edit the "dosboxAlone1.conf" file manually (also with administrator rights)
