I was just going to make a thread about this.
I pre-ordered A Plague Tale: Requiem and did not get the Protector Pack DLC either.

I contacted support as well about this issue. Hope it resolves soon.

Yup, I have the same issue too. Didn't get the protector pack at all. I also contacted GOG support.

At 5am Mountain Time in the USA (2 hours 20 minutes ago from now) I got this reply from GOG

Hello,

Thank you for reaching out to us. We are aware of the issue and we are working to get it fixed as soon as possible. Please note that we will make sure you receive the pre-order DLC you paid for as soon as possible and I apologize for the inconvenience.

And just 10 minutes ago I got a 0.1 MB update for the game, which was the Protector Pack DLC. So the issue has been resolved.

I just received the Protector Pack DLC. The issue seems fixed here as well.
