The game itself does not support a resolution of 1920 x 1200.
After some try and error I can live with the following workaround:
1. Edit GOG Galaxy\Games\A Hat in Time\HatinTimeGame\Config\HatinTimeSystemSettings.ini.
1.1 Change the variables ResX and ResY to the preffered resolution of your choice, which may not supported by the ingame graphic settings. For me it is ResX=1920 and ResY=1200.
