The Steam version apparently unlocks at 18:00 GMT, does the GOG version unlock early? That'd be nice:)

7:00 AM GMT on the 17th it unlocks.
Wow, that's great news. I took a week off work starting tomorrow just to play this :)

Now that's dedication! Oh how I envy you :-)

With 16 endings and an estimated game time of 50h, there's 800h of play. Assuming each day you sleep and eat for 4h total, leaving 20h a day for play, that's just 40 days to beat the game through and through!

Incidentally that's the same amount of time Jesus spent fasting in the desert. Coincidence?

Ok I'm gonna be honest, I would've taken it anyway because we get these off days we can use and this week was perfect to slot them in, so it was just a fortunate coincidence The Witcher 2 is released right at the beginning of it. There, now my shame is known to the world :(

Wonder why Steam is releasing the game so late compared to the other Digital Distributions? Both GoG and Direct2drive are releasing the game on May 17th 7:01am GMT (12:01 am PST)

That doesn't answer the question

Direct2drive is based in California (Pacific coast), and they are releasing the game at 12:01am PST, but Valve is waiting till 11:00 AM PST on the 17th, 11 hours past the World Wide launch time. Valve being on the pacific coast has nothing to do with why they are releasing the game 11 hours past everyone else.
Hmmm, well according to the Support FAQ,

"Activation and playing the game will be possible:
- at 00:01 hour at the night between 15th and 16th May for the Collector's Edition
- at 00:01 hour on 17th May for the Premium Edition
- at 09:01 hour on 17th May for the digital editions

If you attempt to run the game before the dates given above the program will close without any warning immediately after entering the Product Activation Code."

If those times are PST then activation for GOG/Steam/D2D version is not until 4PM (16:00) GMT right?

for the gog it's 7:00 am gmt
Yah, GOG is 7:00 AM GMT, and since it's DRM free, you don't have to activate it to play, you just have to download the 100MB from GOG at 7:00 am.
