Erpy: Carry-over between games is usually rather limited. Between the first and the second game, the protagonist's level carried over IF it was between 35 and 40. (otherwise, it would be set to those values) All the other party members later join at set levels. Depending on your final rank at the end of the first game, you get a couple of items at the start of the second game and if you completed certain quests, the npcs you helped will remember you and if you help them again in the second game they'll sometimes give you bonus items because you've helped them multiple times.
I have some questions then.
How random are level-ups? When characters level up, do they gain random amount of stats or fixed amount?
Are there any permanent stat boosts? If they are, do they transfer in some way (as items, or as already applied bonus)?

No, stat gains from level-ups are fixed and there are no items to permanently increase stats. The only way to increase stats is through the quartz and gear you equip.
Okay, there are 4 hours until it releases on Steam and it still hasn't appeared on GOG for some reason.
I believe the last two games appeared on GOG like 10 minutes before they unlocked on Steam.
I am so much looking towards it, but I am too deeply engulfed by Agarest games currently. To be frank, I wanted to finish them before 3rd Chapter is released, and it was back in time when only 1st Chapter was available.

Level scaling? Not sure what exactly you mean, but all Trails games work with an experience scaling system (similar to Falcom's Ys games) where your characters' levels and the enemy levels are compared. If your characters' levels are below the enemy levels, your experience gets boosted so underlevelled characters catch up sooner. If your characters' levels are much higher than the opposition's, experience quickly scaled down to 1 xp per monster until you entered an area with higher level monsters. Because of this, Trails games are fairly non-grindy.

Level scaling is when you gain a level and all monsters gain a level too. So if you return to Lv.1 Rats as Lv. 100 character, you will find Lv.100 monstrously mutated rats instead. I am glad to hear that Trails doesn't work like that. Exp bonuses and penalty are fine, and I already heard rumors about Shining Poms, who give massive EXP.
Yeah, shining poms are like metal slimes. Practically impossible to kill before they run away unless you blow your limit break on them or hit them with a 20% instant death spell and hope the RNG smiles on you. But the experience and sepith are worth it.
