Me and a friend have been trying to play SS2 in multiplayer for quite some time, the game works perfectly fine, it doesn't crash or have any other issues, even loading quicksaves while in-game works just fine.
However, after quitting the game once, starting a server and trying to load a save causes my friends game to freeze.
After he quits the game, the game loads normally, with his items on the ground.
This makes it impossible to play further than the first time, which would require the game to be completed in one session.

This has been a problem in non-GOG versions as well.

Anyone know any possible fixes?

It's an age-old bug that's never been fixed. Bad luck, I guess.

If you are using a multi-core cpu, then make sure that your affinity is set to only one core for the SS2.exe process. So, start the game up and then use your task manager before you start a game. Hope this helps if you haven't solved it yet!

Note for future OSX players: there's no way to set affinity on mac currently (not even through the wine emulation).

Workaround: Launch Instruments (which may require an Xcode install), and then go to Preferences -> CPUs. On that page you can set the active core count to 1 and disable hardware threading.

Beware though that your computer's going to become REAL SLOW, so close off everything other than the game and undo the setting change when you're done with your Cooping!

If somebody, sometime, manages to fix the co-op multiplayer in Shock 2, I'm set forever. It almost works already. The mentioned save bug is the only thing I've run into that could not be fixed. Here's to hoping!
