The Postal classic and uncut gog 2.0 allows one to save a game anywhere in the file system, by opening a file dialog.

Now in gog 2.1 version, it only allows you to save in one of the pre-defined game save slots. And I cannot load any saved games from gog-2.0 version.

How can I get back the feauture to save and load game anywhere I choose?

I don't know how to get this feature back, but to load your old ones, I'd save a game in every slot. Then go to the game's savegame location (probably \savegames in the game's folder). Move the new saves elsewhere and paste the old ones in and rename them according to the new savegame files.
(I assumed that every slot uses a different save file, but I can't check right now if this is the case.)

It may have worked, but I now find another problem that prevents me from verifying the solution:

Whenever I load a game, it won't restore the game to the saved state. It always restores to the beginning of the game. Saving seems to work though, since the save files get created.

Is this normal, meaning the game only saves the start of that level, instead of exactly at the state where the game was saved? Or is this a bug?

I haven't progressed enough to next level to verify it was starting at the beginning of level, or it just starts at the beginning of the game.

And I find that gog 2.0 version has a few features like loading at level, etc. that is missing in 2.1, so I'm sticking with 2.0 for now. I just need the game load working.

Yes, that's normal, at least it's exactly like it's working for me. Every level is saved at the beginning, but not at the exact point of advance.

I decided to keep gog versions 2.0 since I checked them side by side and 2.0 had "multiplayer", "special delivery levels", and "load level", on top of the ability to save/load anywhere in the file system, which the 2.1 didn't have.
