Just a quick question: When i want overrides to work in (LAN-)multiplayer too, e.g. the Familiar&Companion fixes, how can i achieve this? Is it enough to just put the files in the override folder of the host computer, do both players need them in their overrides folders, or is some other tweaking necessary?

Overrides need to be put on all client computers yes....cause they are client side, not server side.
Familiar&Companion fixes? I would need to know more about the package.
If it is just scripts, Then yes I would only need to go into the host override.

If It has any 2da's in it, then it is according to wether they are used buy just the server or the client.
It has .utc and .dlg files in it. It corrects some bugs with some familiar/companion creatures on certain levels, so they have the correct skills and such.

And it is enough just to put them in the override folder and start a LAN game, no additional actions required? It will automatically use them? No "Allow Overrides" option or the like?

utc and .dlg files are server side only, So you will only need to have then on the computer that is hosting the game. The only place you may run into trouble is if the module uses any haks that also use the same files. The haks will override the override folder.
