When I move my mouse around, the hand cursor will sporadically jump around the screen making looking around and interacting with puzzles a pain. I have seen some people find success with setting the program's processor affinity to 1 but I have had no such luck. Are there any other solutions to this problem?

I have the same issue. I've tried using a different mouse, which seemed to diminish the regularity of it happening but it'll still happen sometimes. Also tried turning off all the environmental animations, which the game itself recommends if the "mouse movement is not fluid", but it still happens.
I managed to fix this issue today by going into my mouse driver settings and restricting the polling rate to 125 hz.

The higher polling rates combined with the aspect ratio stretch were causing some kind of jittery behaviour.
Sadly I would prefer a polling rate of 500 as it's more ideal to me, but it's not a big deal to change it for this game and then change it back later.

*edit* it still happens but it's A LOT less common. I'll try setting polling rate to 125.

*edit 2* Ok so at 125 hz it's been perfectly fine in an hour play session.
After 3 hours play I've had a very small cursor jump two or three times. Totally playable.

Even 125 hz does not help me (maybe even makes cursor worse lol)
