I figured I should probably share this since:
1) many people are probably frustrated with trying to map MM1 out by hand ^_~
2) Some people may need to give themselves a boost
Here is a map I compiled using cluebook scans(WARNING HUGE IMAGE!):

And here is some useful information for hex editing your saved data in ROSTER.DTA

Enjoy!

Many thanks, RC! I may just make use of the Hex Editing to give myself some good starting stats, rather than re-roll them for an hour.
Ah...could you (or anyone really) suggest a reliable free hex editor for this? I'm running Win7 & have never really tinkered with hex editing, but would like to. :-)
Yeah, I tinkered with a couple free hex editors & I just have no idea what I'm doing. I think I isolated "the important stuff" but I'm just clueless on what to change the numbers & such to.
Shame there's not a wysiwyg style of editor for these games.
EDIT: I spoke to soon, I found one. Its on this page (not a direct download link)...

Sorry, I was gone for alittle while, Yea I just use Hex Workshop 16-bit. Its free but unless you pay for it, it keeps nagging you to buy it! It works fine in XP. I am not sure about win 7 though.
Thanks for posting that link too. I cant believe someone actually made one!

I can't imagine it gets alot of use, except for us "completionists" who want to play the whole series. Its very easy to use, with my only complaint being that I don't know of a numbered list for the corresponding Items. I found a list that it seems to match up to, its just not numbered.
True! Once I beat the other game I was playing with MM1, I am going to take down MM2!
Pardon the necro, but guess what I just found...Eric's Might & Magic (1 & 2) editors!
After some trial & error, I've found some anomalies with the Trainers. But fear not, I've found some workarounds.

After setting my Spell Levels to the max (7) and giving myself huge Hit Points (in the 1000s), I found them reverting at intervals that I wasn't able to pin down.

My solution. Give myself huge amounts of Gold & XP, but leave my Spell Level and HP alone. Then, use Sorpigal's (or any other town's) in-town training to raise all those Levels...and the Spell levels and HP will take care of themselves.

In other Trainer news, changing the stat scores seems to work just fine, as does the gold, gems, and food.

Enjoy hulking-up!

I have a problem with MM1. I played it for a while, boosted my party in combat and quests... Then after some time passed I wanted to start new game with this old party. The problem is Lords' quests are stored in save too, so Lords don't give quests from the beginning but from where I left last time. I believe info about quests is also encoded in ROSTER.DTA file. Could anybody help me to revert all the quests without starting a new party?

In such a situation I'd suggest starting a new party, copying the roster file, going quickly and getting a quest, while trying to keep everything else intact, and then using a hex editor with a compare file function. I use Frhed (http://frhed.sourceforge.net/en/) which quickly lists differences between 2 files. It's then a matter of checking which changed byte(s) is responsible for the quest.

Well, there were actually quite a lot of bytes changed and taking Lords' quest involves some other changes I guess, so...

Anyway, I just opened old file with a tool by Eric Lynch (mentioned above), made screenshots of all the characters, then placed clean ROSTER.DTA in game's folder, created 6 new random characters and "imported" my party with save editor again.

Unfortunately yes. Glad you found a way around it.

Unfortunately this link is broken. Has anyone re-uploaded it anywhere?
