Um, slowly? Sorry. Make sure all your equipment is equipped, do some gimme quests, go to the trainers and level up a few times, then try murdering some goblins. Then there are some general tips about combat lying around this forum somewhere, which should also help.

Bows are extremely useful at the beginning, so if you create your own party take bow skill for everyone you can.
As soon as you notice a hostile monster you can press enter to start turn based mode. Hurt and kill them with arrows from the distance, if your mage doesn't have bow skill he should at least have a ranged damage spell.
If you're on the loosing side of the battle pick up the loot from the already killed monsters, end turn based mode and run for your lives back to town.
If one location seems to hard at the moment just explore another one.
To reiterate on the previous post. Bows do matter a lot.

Go to the tavern in New Sorpigal and turn in the letter for 1000 gold. Sell off any of your low level items such as rings. Take the stage coach to Castle Ironfist and buy the bow skill, and cheap bows for as many characters as you can. Preference would be fighters which do not have any magical ranged attacks. Take the coach back to NS and start taking on the Goblins.

Get your Spirit skill up to Expert and use the Bless spell on your party.

Repeat the trip to Ironfist until everyone has the bow skill and a bow.

Take on the mages later but use the hilly terrain to your benefit. Cast Wizard Eye to see your enemies and then lure a few mages into attacking you and hide behind the hill until they become visible. Then whack them.

Enjoy.

Also, make sure you're taking advantage of turn-based mode! Hit the enter key and things will switch to turn-based combat, which can make encounters much easier. Many players are not aware of this feature when they first start the game.
Definitely play in turn-based mode, at least at the beginning. I tried MM6 after playing 3, 4 and 5 and was taken aback by the speed and difficulty of real-time combat. Turn based mode makes the game much easier to play.

To toggle turn-based mode, press the ENTER button.

In addition, you can get the goblins to stand behind the stone fence along the road to Castle Ironfist. They will not be able to attack you, but you will be able to attack them. Problem is, they run away, so you still need to know how to use turn-based mode.
My tactics, at the beginning anyway, is to run back and forth. The fountains in the middle of the town are extremely helpful.

I actually usually had only one archer at the beginning, and this did not stop me from going through Goblinwatch (although two other members (a cleric and a sorcerer) had ranged spells). The Temple can also be done this way, although by then I preferred to get the bow skill.

Also, I'd suggest staying away from the mages, in the beginning. The strategy brozo described is what I did as well.
