MGS 5 is a pretty good game but for anyone who's played the 3rd game it's kind of a downgrade. My soul for a port of MGS 3 for PC even if it's a quick and dirty one.

I'm hoping that Konami will see sales from the GOG versions of these first two classic and be presided to release a port of MGS 3 even if it's a quick and dirt one. Emulating MGS 3 is a pain so being able to play it here would be awesome.

It's quiet easy to emulate actually. But for PC they will need to re-record some dialog regarding control options and they probably won't integrate Snake Eater 3D features. MGS5 would be a better option anyway.
I don't think it's that hard to get a brand new port of the HD Collection version. Same with Metal Gear Solid: Peace Walker, which is essential to the story of Metal Gear Solid V.

The prospect of ever having Metal Gear Solid 4 on the PC is much more unlikely unforunately.
