My priest ended the game at lvl 54 with Strength 100 and Dexterity 110 (the "regular" max for priest is STR 50 and DEX 60, but you can go above these values with magical items and by mixing and drinking elixirs that permanently raise your stats - if you get your Alchemy skill to Master). I guess that throughout the game you will receive so many attribute points that you will "have" to increase your STR and DEX even if you don't want to - just because you will have those attribute points available to you and it is naturally always better to use them rather than leave them aside.

Yes, there should be a difference. On Medium you should generally get better drops (more rare and valuable items) than on Easy. And on Hard you should get better drops than on Medium.

I guess that you can use any books you want and if you would prefer not to use forbidden books at all you can go ahead. But of course, you will miss some useful spells that way.

I think that for a priest, INT, CON and SPD are the most important, and you seem to put more skill points into these than to STR and DEX, so I think that you should be fine.

No, if I'm not mistaken there are no armor sets in Inquisitor. But if you want to wear a better armor you need to invest into Armor Use. On the other hand, priests can achieve only the Disciple level in Armor Use which means that they are not able to wear the best armor there is in the game any way.
