I have seen and played a lot of DOS Era FPS games but I am shocked at the lack of any source ports or mods of Ultima Underworld? to improve gameplay or performance?

Why is that the case at the moment?
There is a source port that fully supports Ultima Underworld 1 and partially supports 2. It's called UnderworldExporter and lets you play the game in Unity Engine.

I remember this project, but it seems that the last update was in December 2018. Even worse, there seems to have been no progress made to getting UU2 working, since last I viewed it.

It's not technically a source port, since they do not have access to UU's source code its more like openxcom, a...re implementation of the game game engine using Unity, though openxcom is all custom and doesn't use unity but its similar in spirit.

The obvious answer would be because the source code was never released (as far as I'm aware). You can't have a source port if you don't have the source code.

This, to me, along with my necropost, is indicative of everything wrong with the source port scene.

We're considered lucky to get those few gems like ZDoom because most devs who do source port work get this holier-than-thou thing about their time and what its worth and how hard they work on code.

DOSBox itself is still v.74 hahaha. And Steam and Gog bundle it with almost everything. And that lazy hack clown who created it hasn't touched it in probably 10 years.

I just wish the source port scene in general was a better class of people.

Oooh, yes - Blood FS is on Nightdive's Kex Engine.
I have the old editions (One Unit Whole) on GOG and Steam; and also the new Blood FS on Steam.

I also like the NBlood engine re-implementation for Blood.

yeah its pretty accurate, and runs slightly better and is a tad bit less illegal then BloodGDX

the dev of GDX uses leaked blood alpha code which lends it some unfavorable status the dev claims he will eventually remove it as he develops replacement code, but it makes certain people nervous.

Open Morrowind is another good one.
FWIW, Underworld Exporter has had a few new commits recently. Still no new release, but it looks like development is resuming after the hiatus.
