Embark on a swashbuckling adventure in a visual novel with a unique twist: the story, the crew, and who you are transform based on your choices. The Pirate's Fate is now available on GOG.COM with a 50% discount that will last until 14th July 2021, 1 PM UTC!

Uhm... it's pretty much the main feature as presented in the trailer.

Although I had no idea that's a fetish too, I was only aware of the "boobs, tail and animal-ish head" thing.

I'm no furry expert, but I think it's a story writing excuse to create different dynamics with the same characters with different bodies. Some people get bored of seeing a stereotypical muscular lion plowing a voluptuous rabbit. So sometimes it's interesting to see that rabbit grow a gigantic throbbing member and return the favour, reversing that relationship's dynamic for whatever reason.

I also think it may be an excuse to grant a "lust berserk" status effect to these transformers so they can go 100% metal on their partners / victims with hyper-exaggerated amounts of stamina and fluids. But I've done enough research for today.

maybe i'm as clueless as you was, but what exactly is the fetish in Gon' E-Choo!? All i see is a game about old arcade platform games. O.o

There's at least 3: Size changing, vore, and scalies in general. That last one can be discounted and replaced if something more obvious comes up.
