I would recommend Hind. The graphics may be dated but I've been having a blast so far and I'm still in the tutorial!

Anyway, I'm going to give away Viking: Battle for Asgard (HB Key) to the first reply.

revanbh: Well, I'd definitely recommend TIE Fighter/X-wing combo. Freespace series is also great. Wing Commander III and IV are good choice. You can get them all here on GOG. Aside from that, X-wing: Alliance. They are all space sims, but should give you hours of fun, even if you're looking for modern aircraft sims exclusively.

Terminal Velocity (more on the arcade side of the spectrum)
Descent (The third one was quite pretty for it's time)
Wing Commanders (I personally really enjoyed Prophecy back in the day)
Freespaces (The first one is really good didn't get to play the second)
